While we <br /> were there we walked the rest the area and discussed other elements and developments since the new building was essentially a box on the site plan when we <br /> put this together this spring. <br /> We learned that the building is proposed to have what I would call a"grease trap"just outside the building to serve the kitchen area. Since we have a dedicated <br /> tank(Kitchen Septic Tank)that is plumbed to be more effective at retaining more floating material(such as fats,oils,and grease)along with other food particles, <br /> I strongly recommend the grease trap not be installed. My concern with the smaller vessel(plumbing fixture)that is currently shown and proposed in addition <br /> to the kitchen septic tank is that these devices do not typically get cleaned as often as needed and the chemical distributors are quick to sell people automated <br /> dispensers of either enzymes or emulsifiers that liquefy the contents,simply moving them downstream and making it more difficult to remove and/or treat. I <br /> had this come up in Linn County several years ago and the plumbing inspector was able to follow my logic and allowed the grease trap to be omitted in favor of <br /> the larger tank we had dedicated to that same source. Can you help with that in this instance? <br /> Also,it has been concluded that the foot bridge we intended to use for crossing the drainage ditch will not be retained and there is a better alternative now. <br /> They extended the culvert downstream of the road to the tasting room so we can run our effluent sewer pipe over the culvert instead. We also need to shift <br /> the kitchen septic tank and primary septic tank for the tasting room over to near the power vault,along the access road. This will keep them out of the fill slope <br /> (where they are currently shown on the site plan)and facilitate easier access for placement,service,and maintenance. <br /> The attached mark-up of the plumbing plan shows the grease trap described above and my proposed changes to the tank placement and drainage crossing.
