The residential (domestic) <br /> stove/ovens are are only utilized approximately 12 hours per week and have been considered <br /> light duty appliances, please refer to attached email from the Foods Lab instructor; class <br /> schedules; products cooked; and frequency. <br /> Based on the 2010 UMC Paragraph 507.2.2, Type II hoods are required for light duty <br /> appliances in this residential application. However, the Paragraph 507.2.1 requires a Type I <br /> hood over medium or heavy duty grease or smoke producing appliances, however, the <br /> Paragraph 507.2.3 exception allows for a single domestic cooking appliance under a Type II <br /> hood. The renovation to the Foods Lab could be provided with individual exhaust hoods for <br /> each piece of domestic cooking appliances. Additionally, the existing building conditions <br /> preclude the installation of excess hoods and ductwork thru the building or out the exterior wall. <br /> The Owner is requesting an approval on an Alternate Material and/or Method. The existing <br /> condition has 6-8 electric stove ovens without exhaust hoods. In lieu of providing numerous <br /> Type II hoods over individual domestic cooking appliances, the District is requesting a safer <br /> installation to provide a single Type II hood over multiple domestic cooking appliances. Refer to <br /> attached catalogue information on the new residential appliances. The requested alternative <br /> will also include increased fan and duct size, as well as filter medium within the hood that can <br /> be removed and cleaned frequently which also increase the safety to the classroom. <br /> Additionally the classroom is provided with (2) two fire extinguishers as well as (2) two ceiling <br /> mounted heat detectors. This request will save the Owner time and expense, increase safety, <br /> as well as greatly enhance the educational opportunity for each student in the Foods Lab. <br />
